The symbol with the cross and snake is called the Flamel, and it means victory over death. While as the oroboros which is the dragon eating it's own tail, and worn by the homunculus symbolizes the circle of life.
Added: If you really pay attention to the series you will notice that Dante, was a Christian earlier in her life before the religion died off (both by destruction, and the rise of other religions), and that is how she adopted the symbol. Also there was an ancient alchemist in real history named Flamel (I forgot his first name) that adorned this symbol.
